I don't know about you but apart me has a hard time giving up what we consider to be "winter dishes" when summer comes. I made this dish some time in December when I received the recipe in my Facebook messenger inbox by someone who wanted me to cook it for them, that didn't happen, but me and my son surely enjoyed it! It's a chicken stew that's cooked on the stovetop and then finished in the oven to create a crusted surface on top of the chicken. Absolutely delicious! The mix of vegetables, broth, and rosemary always excites the palette during cold winters nights but will it lose its affect in the summer?
I never usually make dishes like this during warm weather but this year I think I'm going to keep a few of those "winter dishes" in rotation. You can add chili to the list as well.
